RECIPE: Thai Green Curry Pesto

THAI GREEN CURRY PESTO

Makes approx. 1 1/2 cups

Fantastic on fish, shrimp, chicken or on pasta.

INGREDIENTS

2 cloves garlic, peeled
1/4 cup roasted, unsalted cashews
1 – 1-1/2 cups packed cilantro
Juice of 1 lime
3 tbsp “Thai Taste” Green Curry Paste
1/4 cup peanut oil (or veg oil)

PREPARATION

Place garlic and cashews in a food processor, and process for 10 seconds

Add cilantro, lime juice and curry paste and process until smooth

Add peanut oil in a stream, scrape down sides and process for another 5 seconds
